Have yourself a Merixican Christmas
Aaaah! It’s that time of the year again. The time all the family comes together, open presents, laugh and eat and drink far too much. But who cares, that’s what Christmas is all about. Every year is almost identical to the last, but why not spice things up a bit this year with a few Mexican touches from your extended family at Pepitos.
We know what you’re thinking. Hot Chocolate isn’t exactly mixing things up. But hear us out. Try this version and you won’t want to go back to that Cadbury packet nonsense. It is much thicker and sweeter with a spice kick to it. Perfect drink to any time of the day!
You can use brown sugar and ‘normal’ chocolate (we recommend chilli chocolate) if you cannot get a hold of the authentic ingredients.
We will let the video do all the talking. The beauty of this drink is you can play around with the ingredients a bit and make it to your liking. This is definitely one of our favourite drinks at the staff party.
Ensalada de Noche Buena
A lovely salad to accompany any Christmas dinner and much easier to prepare compared the others. All you need is:
1/4 cup olive oil
3 tablespoons orange juice
2 tablespoons red wine vinegar
1 teaspoon salt
1 tablespoon fresh and chopped coriander
2 beetroots, cooked and julienned
2 apples, peeled and sliced into wedges
2 oranges, peeled and segmented
2 bananas peeled and sliced into rounds
1 cup fresh pineapple cubes
1/2 cup unsalted peanuts
1. In a small bowl, whisk together olive oil, orange juice, vinegar, salt, and cilantro. Put this to one side.
2. Wash and dry lettuce leaves and then shred. Arrange the lettuce on the bottom of a glass bowl and then layer beets and fruit on top of lettuce, it can be mixed, although, doesn’t have to be.
3. Top with peanuts and pour the dressing over the salad.
